Best Coleslaw on the planet
Healthy, tasty and gets better day by day...up to 3-4 days in the fridge, it won't be in there long enough to get mouldy...too delicious!
Shred or chop real fine 1/2 head of cabbage and 1 carrot (celery if you wish, but break in small pieces before you chop to take out the strings or you could floss your teeth as you eat) Add dressing and cut up pieces of apple and raisins just in the amount you wish to serve as they won't stay nice and crispy if left in too long.
Dressing
6 tablespoons sugar 4 1/2 tablespoons cider or any vinegar is o.k.
1 teaspoon salt
1 cup mayonaise
Taste it and add more of anything to get it exactly as YOU want it to taste.
If your guests don't like it, get new guests. Men do not seem to like it as much as ladies do, but what do they know about good stuff? You can add other things also like pineapple, red and green peppers, walnuts or even onion.
Tip for the day: To keep fresh lemons ...cover with cold water in the fridge...change every week. This will keep them nice and juicy, honest.
Beef Stroganoff
Use cooked prawns for non meat eaters Cut into small pieces and add just to warm before serving
2 pounds beef tenderloin (any steaks will do) cut in 1/4 inch slices and then bite size. Brown them in a skillet with oil or margarine. Set aside. Add more margarine and cook I or two cut up onions until soft. Shake in a jar 1/2cup flour or 1/4cup cornstarch with I cup water and I cup milk (add ice cube ... shakes better).
Add to skillet and cook gently until thick ... if too thick add more milk. Salt & pepper as you like and a couple boullion cubes. Then a can of mushrooms or fresh ones . Last thing put the meat (back in and before serving on noodles or rice you can add some sour cream and paprika or parsley to make it look pretty.
Extra Good Rice

Break 1/2cup of spaghetti or vermicelli into 1/4 inch pieces.(bigger o.k.) Brown in heavy pan (good lid) with 3/4 cube butter. Add I cup of rice and salt & pepper.
Add 2 1/2 cups boiling water, stir once quick (it could be messy) and pop lid on, turn heat down to medium low and do not peek for 20 or 30 minutes.
